Passion Fruit Sparkling
A bright passion fruit sparkler — sharp, fragrant puree in the professional 1 kg format bartenders standardized on for sodas and cocktails.

Ingredients
| Passion fruit puree (HNK, thawed) | 30–40 g |
| Simple syrup | 15–20 g, to taste |
| Sparkling water or tonic | 220 ml |
| Ice | fill glass |
Method
- Stir puree and syrup together in the base of the glass.
- Fill with ice and top with sparkling water or tonic.
- Stir once; add a splash of spirit for a low-ABV cocktail if desired.
Kitchen note
Passion fruit is high-acid — lead with syrup, then taste. Ratios are a bar starting point, not a fixed spec.
Amounts are café starting ratios, not HNK specifications — the puree is unsweetened, so tune sugar and dilution to your menu.
